Filipino and Vietnamese cuisines collide at Fil N’ Viet. This marriage of flavors comes directly from the couple who owns this eatery. When Rosie and Kevin Truong wed, their lives fused, and one large portion of their lives that became one was meal time. Time spent in the home kitchen became a ballet between Rosie’s much-missed family favorites like the sour-spicy-sweet Chicken Inasal and Kevin’s Vietnamese heritage — until they discovered that these South Asian cuisines had much in common. Thus the duo’s restaurant was born. The blended culinary heritages found their spiritual home in the Hamachi Kinilaw, a Filipino-style ceviche made from amberjack that is dressed up with Thai chilies and crispy shallots before being delicately dressed in a coconut milk and sugar cane vinegar. A squeeze of burnt lime on top and a taste are all it takes for a Ferris wheel of flavors to tumble across taste buds.
