Brunch Bird:
Eggs Benny
Some might think that brunch without bacon or sausage is for the birds. But at Brunch Bird, the philosophy revolves around bird food. Part of the Plow Burger family of vegan restaurants, this fully plant-based concept is located inside Buzz Mill on East 7th Street. Their take on Eggs Benedict is one menu stand out. Two thickly sliced pieces of sourdough pave the way for a dreamy brunch classic, though the star of this decadent vegan dish is the seemingly impossible runny ‘egg yolk’ that balances precariously atop the pillowy JUST Egg and slices of “bacon.” Though this combination may not be an exact visual match for the typical poached egg, the combination of fluffy ‘eggs’ and the creamy, flavorful yolk dripping golden, gooey goodness over the sides make for a substitute that stands on its own. Arugula and raw onion add a bit of bite, while a slice of tomato adds a sweet acidity.
