This relatively new hotspot does an incredible job of exploring and interpreting the diverse cuisine found throughout the Caribbean, and part of that diversity includes fish. At Canje, fresh bass is transformed into a main course masterpiece that’s as flavorful as it is colorful. In the bowl, the fish swims in the middle of a small sea of creamy rum butter, with green mango and cilantro. Every bite is mild, yet plenty sweet. Its surprisingly firm texture encourages diners to savor the complex flavor profile, as they transport to a place where water is clear and the sun is bright.
